Located on South Barrington Avenue, this restaurant introduces diners to the traditional Roman pinsa, a flatbread with a history rooted in ancient Rome. Distinct from traditional pizza, the pinsa dough is made from a unique blend of rice, soy, and wheat flours, which undergoes a meticulous fermentation process to create a light, crispy, and airy texture. This process not only elevates the flavor but also offers a healthier and more digestible alternative to standard pizza crusts.
